A delicacy with History and a Taste of Tradition: Chile en Nogada

To talk about chile en nogada is to dive into a living legend, more than a dish, it is a flavorful tale of Mexico’s independence.

It all began in 1821 in Puebla, a vibrant city, full of hope and joy because Mexico, after so many struggles, would be free. It is said that the nuns of the Convent of Santa Monica, always creative and devoted, decided to make something special to honor Agustin de Iturbide, the man of the moment, the one who had signed the Treaties of Cordoba. They wanted to create a dish that would not only delight the palate, but would also bear the colors of the new nation: the green of the poblano chile, the white of the nogada and the red of the pomegranate.

What a wonderful combination! Poblano peppers, roasted and carefully peeled, are stuffed with a picadillo that is a feast in itself. Beef and pork, mixed with seasonal fruits such as panochera apple, milk pear and Creole peach, plus raisins, pine nuts and almonds. Each bite is an explosion of flavors, sweet and salty, soft and crunchy.

The magic doesn’t end there. The nogada, a creamy sauce made from walnuts, cream and a touch of sherry or white wine, covers the chile with a white mantle. To top it off, pomegranate seeds sparkle like red jewels, and a few parsley leaves add the final touch of green.
